Happy St. Patrick’s Day! …or, almost anyway 🙂

Here’s a fun treat for the luckiest day of the year:

Lucky Shamrock Cupcakes

Not the best Shamrocks, but there you go..
(prep time 30mins / bake time 16-20mins)

Here’s what you need:

4-6 drops green food coloring

1 can (16oz) vanilla frosting

1 ½ cups all-purpose flour

¼ cup green colored sugar

1 teaspoon baking powder

¾ cup granulated sugar

¼ cup butter, softened

¼ teaspoon salt

1/3 cup milk

2 large eggs

Here’s how to make ‘em

Preheat oven to 350 degrees

Line 12 muffin cups with paper baking liners

Combine flour, sugar, milk, butter eggs, baking powder and salt in a large bowl

Beat with an electric mixer on low-speed until moistened

To tint batter green, add food coloring, 1 drop at a time, until desired shade is reached

Increase mixer speed to medium

Beat 2 minutes

Divide batter evenly among prepared muffin cups, filling each about two-thirds full

Bake cupcakes until tops are golden and a toothpick inserted in centers comes out clean (about 16-20mins)

Cool in pan on a wire rack about 5mins

Remove cupcakes from pan

Place on wire rack to cool completely

Spread frosting on cooled cupcakes

Lightly place 1in shamrock-shaped cookie cutter on 1 cupcake

Carefully sprinkle green sugar inside cookie cutter

Remove cutter

Repeat with remaining cupcakes
